Birthday
Igo downstairs. The house is still sweet with baking.
I reach the foyer but then make a U-turn and go to
the kitchen. The layers of cake have cooled nicely.
- What else is there for me to do? It is his birthday.
- I crack an egg and separate the yolk from the whites. I
repeat this three more times. I add sugar to the yolks and
beat them with a whisk. This feels good. Then I heat up
a pan of water and melt the chocolate in a second pan. In
the meantime I beat the egg whites. I'm not thinking now.
The whites hold their peaks perfectly. I mix the chocolate
with the sugar and the yolks. Then I fold in the whipped
whites.
- I work briskly. And for the first time in a long time,
perhaps for the. first time ever, I feel at peace. I'm not
familiar with this recipe, but I know what I need to do.
- I spread the mousse on the layers of cake. I spread it on
thick. This, I know, the boy will like.
